Untill now there were only two ways to achieve long shelf
life with liquid egg products:
1) use of chemical additives which are allowed
by the law. They alter the pure image of the egg and are not
practical for dose and blending;
2) use of high temperature pasteurization
together with an aseptic filling technology. This technology
has the big downside of denaturating the egg proteins which
seriously compromises the egg natural physical and chemical
properties.
